A quick and easy vegan ramen noodle recipe that is great for when you're in a hurry or have a lot to do. This dish is both filling and healthy. The flavorful broth and bright vegetables give it a lot of flavor.
Ingredients:
- 2 packs of instant ramen noodles
- 4 cups vegetable broth
- 1 cup sliced mushrooms
- 1 cup chopped bok choy
- 1/2 cup sliced carrots
- 1/4 cup sliced green onions
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1/2 teaspoon chili flakes optional
Instructions:
In a pot, bring vegetable broth to a boil
Add in mushrooms, bok choy, carrots, green onions, soy sauce, sesame oil, ginger, garlic, and chili flakes
Simmer for 5-7 minutes until vegetables are tender
Meanwhile, cook the instant ramen noodles according to package instructions
Once the noodles are cooked, drain and divide them into bowls
Pour the hot vegetable broth and vegetables over the noodles
Garnish with extra green onions if desired
Serve immediately and enjoy!
